What better way to start your day by smashing this smoked salmon, scrambled egg and crushed avocado on wholemeal toast. It tastes amazing, is easy to make and will leave you full of energy and feeling fuller for longer.
2 x medium eggs 1/2 avocado
2 x slices of bread 1 x knob of butter
Splash of milk 1/2 filet of smoked salmon
Salt and pepper
- Break eggs into a mixing bowl and beat together, then add the milk and mix all together.
- Put the knob of butter into a pan on the hob slightly melt the butter then add the egg and milk mix and continue to mix until you get the consistency that you like.
- Mean while place the bread in the toaster.
- Mash the avocado in a bowl with a fork.
- Load up your toast with avocado then your egg on top and finally your smoked salmon, sprinkle on some pepper and enjoy!
